Las uvas son refrigeradas para preservar los precursores arom\u00e1ticos de la piel y evitar oxidaciones. Se realiza una primera fermentaci\u00f3n, durante 30 d\u00edas a 15\u00b0 C, y una vez terminada se procede al coupage o mezcla de los distintos vinos base. Posteriormente, pasamos a la segunda fermentaci\u00f3n dentro de la botella en la que la levadura transformar\u00e1 el vino en cava y producir\u00e1 las sus caracter\u00edsticas burbujas.
