Las uvas son enfriadas para preservar los precursores arom\u00e1ticos de la piel y evitar oxidaciones. Posteriormente, realizamos una primera fermentaci\u00f3n de los mostos flor durante 30 d\u00edas a 15\u00b0 C, y una vez terminada, se realiza el coupage o mezcla de los distintos vinos base. Gracias a la autolisis, la levadura se desintegra y aporta todas sus caracter\u00edsticas, aromas y propiedades durante los 36 meses de crianza.
